The combination of flavours, from tangy goat’s cheese to the sweetness of the honey will surely please your customers’ palates.

Warm goat’s cheese salad with purple sprouting broccoli
Serves 2


  • 1 bunch of purple sprouting broccoli
  • 1 goat's cheese wheel
  • 1 tbsp wholegrain mustard
  • 1 tbsp honey
  • 4 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Handful of capers
  • Handful of walnuts or pinenuts
  1. Drizzle olive oil onto purple sprouting broccoli and add salt and pepper.
  2. Chargrill the broccoli until the leaves are just wilting and slightly charred to develop the flavour.
  3. Halve the goats cheese wheel horizontally and bake for 20 mins at 180C fan.
  4. For the dressing combine the Dijon mustard, honey, cider vinegar and olive oil.
  5. Serve the cheese on a bed of the broccoli, capers and olives. Pour dressing over the dish, or serve separately.
