Warm goat’s cheese salad with purple sprouting broccoli
Serves 2
Ingredients
- 1 bunch of purple sprouting broccoli
- 1 goat's cheese wheel
- 1 tbsp wholegrain mustard
- 1 tbsp honey
- 4 tbsp olive oil
- 1 tbsp white wine vinegar
- Handful of capers
- Handful of walnuts or pinenuts
Method
- Drizzle olive oil onto purple sprouting broccoli and add salt and pepper.
- Chargrill the broccoli until the leaves are just wilting and slightly charred to develop the flavour.
- Halve the goats cheese wheel horizontally and bake for 20 mins at 180C fan.
- For the dressing combine the Dijon mustard, honey, cider vinegar and olive oil.
- Serve the cheese on a bed of the broccoli, capers and olives. Pour dressing over the dish, or serve separately.
