Lisa Goodwin-Allen’s crumpets
Serves 6
Ingredients
- 300g water
- 10g yeast
- 150g strong white flour
- 150g plain flour
- 10g salt
- 20g suger
- 5g baking powder
- 85g cold water
Method
- Heat the water to 40°c then dissolve in the yeast.
- Mix the flours, salt and sugar then mix in the yeast mix.
- Leave to prove for 45 minutes.
- Mix the cold water and baking powder together and gently whisk it into the proved mix, then prove again for a second time for about 30 minutes until you see large air bubbles start to form and has doubled in size.
- Using a lightly greased ring on the plancha, place the amount of mix required to the size of crumpet you want at 130°c -140°c heat.
- Leave for 5-10 minutes until the mixture starts to set on the outside.
- Remove the ring and turn the crumpet over to cook the other side.
