We source our quail from Norfolk Quail. These are ethically bred and reared free-to-fly at Highfield Farm. Norfolk Quail are grown naturally and are not processed until approximately 12 weeks of age. The meat is processed on the farm using methods similar to French quail. The birds are hand plucked and waxed using traditional methods to ensure that the skins are not damaged in the process. Norfolk Quail meat, which of course is a game bird, is not bled on the processing line so as to maintain a beautiful, slightly pink colour and intense flavour.
