It’s an exciting time at Wellocks with the festive season drawing ever closer, the promise of seasonal excellence and Christmas produce starting to arrive (purple sprouts, medjool dates and fresh chestnuts).

Wellocks black winter truffle is in great demand, and our white truffles sourced in Istria, Croatia have proven a great success this season. Our chefs absolutely love them and there is no doubt as to the reason why. We soon realised this when filming at Crafthouse restaurant in Leeds a few weeks ago. Opening the glass kilner jar where the truffles were stored was like opening Pandora’s Box, one sous chef told us.  Head Chef Lee Murdoch was excited to have white truffles for his venison ravioli dish. It was one of those rare moments of raw culinary magic as the dish was sprinkled with a delicate grating of truffle for guests to enjoy.

Last week Wellocks visited the BBC Good Food Winter Show in Birmingham, which was an absolute treat for foodies like us. It’s always a good way to sample new products, as well as support our suppliers and it was great to see one of our favourites – Punjaban Spice – at the event.

We also enjoyed watching Michel Roux Jnr cook an alternative Christmas dinner in the Good Food Supertheatre.  Michel was incredibly down to earth and spoke endearingly of the closeness of the Roux family – especially at Christmas.

Michel’s Christmas dish featured goose and baked apples with mincemeat and he explained that for him Christmas is about perfecting everything. And joked that he would be doing the cooking at home to ensure he ate well!

He also gave advice about getting those roasties right. “The key to the perfect roast potato is a good quality potato, blanched and then cooked in goose fat – perfection!”  You can find Michel’s roast potato recipe here.

We also watched celebrity chefs James Martin and Phil Vickery cook up a storm and answer questions. Phil was keen to point out that he dislikes the tag ‘celebrity chef’ and sees himself as a writer of cookbooks – pointing out it takes him a year to write a book, and that his publicist doesn’t always agree with his ideas!
